This apple crisp ditches the sugar overload for a friendlier substitute, so you get all the cozy cinnamon-apple vibes without the blood sugar rollercoaster. Think of it as comfort food with a responsible twist—like wearing pajama pants, but the fancy kind.

This version is super easy to make, diabetic-conscious, and with a little cannaflour and medicated butter, it comes with that extra "Chef 420 touch." Perfect for sharing with friends, or not… we don't judge.

Ingredients:

Filling:

  • 5 cups cooking apples (Granny Smith works best for that sweet-tart punch)*
  • 2 Tbsp sugar or equivalent sugar substitute
  • 1 tsp lemon juice
  • ½ tsp apple pie spice

*Chef's Note: Frozen or canned can be substituted, but they will have added sugar

Topping:

  • ½ cup rolled oats (or quick oats if you're impatient)
  • ÂĽ cup sugar or equivalent sugar substitute
  • ½ cup flour or (ÂĽ c. cannaflour and ÂĽ c. baking flour)
  • ÂĽ tsp apple pie spice
  • â…“ cup medicated butter (softened but firm, so it plays nice)

Optional: light whipped topping—because sometimes we all need a little fluff

Directions:

Preheat oven to 375°F. (Your kitchen should start smelling like a cozy fall day soon.)

Filling:

Peel and slice apples, toss in a bowl with sugar (or sub), lemon juice, and ½ tsp spice. Transfer to a greased 9x9 baking dish.

Topping:

In a medium bowl, mix oats, sugar (or sub), cannaflour, and remaining spice. Cut in the softened medicated butter until you've got coarse crumbs. (If it looks like something you'd sprinkle on ice cream, you nailed it.)

Sprinkle topping evenly over apples.

Bake 30–35 minutes, until apples are tender and topping is golden brown. 140F.

Serve warm. Add whipped topping if you're feeling fancy.

Yield: About 8 (½-cup) servings — depending on how generous your scoops are.

Sugar Substitutes:

Splenda®, Equal®, or Sweet 'N Low® work fine—just follow the package directions to match the sweetness of 2 Tbsp sugar.
