Banana Raisin Quick Bread

Banana bread is already a comfort food classic—but this one comes with a crunchy twist from Special K cereal, juicy bursts of raisins, and a medicated butter boost to keep things… interesting. Equal keeps the calories in check, so you get all the flavor without feeling like you've inhaled a sugar bomb.

Ingredients:

1 cup mashed ripe bananas (about 2 medium)

1 ½ cups Special K cereal

6 Tbsp medicated butter (softened)

1 cup Equal sugar substitute

2 large eggs

1 tsp vanilla extract

2 cups cannaflour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

1 cup raisins
Directions:

Combine banana and milk in a medium bowl. Stir in cereal and let sit 5 minutes to soften.

In a separate bowl, beat medicated butter and Equal until fluffy. Add eggs and vanilla; beat until blended.

Stir in the cereal-banana mixture.

Gradually add cannaflour, baking powder, baking soda, and salt. Mix until combined.

Fold in raisins.

Spread batter evenly into a greased 9x5-inch loaf pan.

Bake at 350°F for 45–50 minutes, or until a toothpick in the center comes out clean.

Cool 10 minutes before removing from pan, then cool completely on a wire rack.
Yield: 1 loaf (about 12 slices, depending on how thick you cut them).
