Banana Raisin Quick Bread

Banana bread is already a comfort food classic—but this one comes with a crunchy twist from Special K cereal, juicy bursts of raisins, and a medicated butter boost to keep things… interesting. Equal keeps the calories in check, so you get all the flavor without feeling like you've inhaled a sugar bomb.

It's hearty, full-flavored, and comes together quickly. Perfect for breakfast, snack time, or as a sneaky way to convince yourself you're eating something "healthy" (hey, there's fruit and cereal in it, that counts… right?).

Ingredients:

  • 1 cup mashed ripe bananas (about 2 medium)

  • 3 Tbsp 2% milk

  • 1 ½ cups Special K cereal

  • 6 Tbsp medicated butter (softened)

  • 1 cup Equal sugar substitute

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 cups cannaflour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • 1 cup raisins

Directions:

  1. Combine banana and milk in a medium bowl. Stir in cereal and let sit 5 minutes to soften.

  2. In a separate bowl, beat medicated butter and Equal until fluffy. Add eggs and vanilla; beat until blended.

  3. Stir in the cereal-banana mixture.

  4. Gradually add cannaflour, baking powder, baking soda, and salt. Mix until combined.

  5. Fold in raisins.

  6. Spread batter evenly into a greased 9x5-inch loaf pan.

  7. Bake at 350°F for 45–50 minutes, or until a toothpick in the center comes out clean.

  8. Cool 10 minutes before removing from pan, then cool completely on a wire rack.

Yield: 1 loaf (about 12 slices, depending on how thick you cut them).
