🍫 Chocolate Swirl Cheesecake

This medical marijuana–infused cheesecake is so creamy, rich, and smooth, it should probably come with a warning label: "May cause spontaneous smiling."

I've tested it both medicated and non-medicated, and trust me — it's dangerously delicious either way. Whether you're making this for dessert, date night, or just because it's Tuesday, you'll be glad you did.

Ingredients:

  • 1 prepared or infused crust in a 9-inch springform pan

  • 1 envelope unflavored gelatin

  • Âľ cup medicated milk (Bhang)

  • 16 oz reduced-fat cream cheese, softened

  • 8 oz fat-free cream cheese, softened

  • 8 oz fat-free sour cream

  • â…“ cup sugar or sugar substitute (equivalent to â…“ cup sugar)

  • 2 tsp vanilla extract

  • 4 oz semisweet chocolate, melted

  • (optional) 2 tsp oil tincture stirred into the melted chocolate for extra potency

  • Chocolate curls for garnish (optional)

Directions:

  1. Read My Cheesecake Tips & Tricks — seriously, they'll make you a cheesecake pro.

  2. Prepare your crust and chill it in a 9-inch springform pan until ready.

  3. In a small saucepan, sprinkle gelatin over medicated milk. Let it stand 5 minutes, then heat and stir over low until dissolved. Remove from heat and cool 15 minutes.

  4. In a large bowl, beat cream cheese until smooth. Add sour cream, sugar, and vanilla; beat until fluffy.

  5. Gradually blend in the cooled gelatin mixture.

  6. Divide filling in half. Stir melted chocolate (and tincture, if using) into one half.

  7. Spread the white cream cheese mixture over crust. Drop small spoonful's of the Chocolate mixture on top, then swirl lightly with a knife. Repeat with remaining mixtures for that classic marbled look.

  8. Cover and chill 6 hours or until set.

  9. To serve: loosen edges with a knife, remove springform ring, slice, and top with chocolate curls(not shown).

Sugar Substitute Tips

Choose from: Splenda® Granular, Equal® Spoonful, or Sweet'N Low® bulk or packets.
Follow package directions for â…“-cup sugar equivalence.

Nutrition (with substitute): roughly 120–140 calories per slice, low-fat, and low sugar.

Chef's Note

This is the one — creamy, dreamy, and perfectly swirled. If you're feeling fancy, serve it chilled with a drizzle of medicated chocolate sauce and a side of "I told you so.
