Walnut Fudge Brownies
(Sugar-Free & Full Flavor)

Who says you can't have your brownie and eat it too? These sugar-free fudge brownies deliver all the rich, chocolatey goodness you crave — minus the sugar crash. Made with Splenda®, sugar-free pudding, and a generous dose of medicated butter, they're the perfect blend of fudgy and functional.
Add walnuts if you want a little crunch (and who doesn't?). They're the kind of brownies that'll make you forget they're diabetic-friendly… until you remember and feel like a genius.
Ingredients:
- ½ cup infused bud butter
- ¼ cup unsweetened cocoa powder
- 2 eggs
- 1 cup granular sucrose sweetener (such as Splenda®)
- ¾ cup all-purpose flour
- ⅛ tsp salt
- ¼ cup skim milk
- ½ cup chopped walnuts (optional, but recommended)
- 1 (1.4 oz) package sugar-free chocolate fudge instant pudding mix
- 1 cup skim milk (for frosting)
Directions:
- Preheat oven to 350°F (175°C).
- Grease and flour an 8x8-inch pan.
- In a small saucepan over medium heat, melt the medicated butter and cocoa together, stirring until smooth.
- Remove from heat and let cool slightly.
- In a large bowl, beat eggs until frothy, then mix in the sweetener.
- In separate bowl, combine flour and salt;
- Stir into egg mixture. Add the cooled butter-cocoa blend.
- Stir in ¼ cup milk, then walnuts if desired.
- Pour into the pre-prepared pan and bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
For the frosting:
Mix pudding mix and 1 cup milk using an electric mixer for 2 minutes or until thick.
Spread over cooled brownies. Let fully cool before cutting into squares.
